Martin Scorsese’s Raging Bull movie is a 1980 biographical film starring Robert De Niro as the real-life boxer Jake LaMotta. The film is widely regarded as one of the greatest movies of all time, and it is considered a masterpiece of American cinema. We will explore why in a moment but first who was Jake LaMotta?

Jake  LaMotta – The Raging Bull?

Jake LaMotta was a legendary middleweight boxer from the Bronx, New York, and is widely regarded as one of the greatest fighters of all time. However, his life outside the ring was just as fascinating, marked by his tumultuous relationships, run-ins with the law, and his struggle with personal demons.

LaMotta was Born on July 10, 1922,  the eldest of seven children to Italian immigrants. His childhood was marked by poverty, violence, and crime and he dropped out of school at the age of 14 to start working odd jobs to help support his family. He discovered boxing at the age of 16, and quickly found that he had a talent for the sport while competing in amateur fights. In 1941, LaMotta turned professional and began fighting in small venues around New York City.

He quickly gained a reputation as a tough fighter with a strong chin and became known for his aggressive style which earned him the nickname “The Bronx Bull”. In 1949, LaMotta got the chance to fight Marcel Cerdan for the world middleweight title in what is widely considered one of the greatest middleweight championship fights in boxing history.

The fight took place on June 16, 1949, at the Briggs Stadium in Detroit, Michigan. Cerdan was the reigning middleweight champion and came into the fight with a record of 111 wins and only four losses. LaMotta had previously lost to Cerdan in a non-title fight. In the first round, LaMotta landed a devastating left hook that broke Cerdan’s right hand but Cerdan continued to fight on, using his left hand to land several powerful punches. As the fight progressed, LaMotta began to take control, punishing Cerdan with a barrage of body shots and in the ninth round, LaMotta landed a crushing left hook that sent Cerdan to the canvas. Cerdan tried to get up, but his injured right hand prevented him from doing so, and he was counted out.

For LaMotta, it was the highlight of his career. Cerdan, unfortunately, never got a chance to avenge his loss, as he died in a plane crash just a few months later. LaMotta lost his middleweight title two years later to Sugar Ray Robinson. The fight, which took place at Chicago Stadium, was the sixth and final meeting between the two fighters. Robinson won the fight by a technical knockout in the thirteenth round, becoming the new middleweight champion of the world.

Despite his success in the ring, LaMotta’s personal life was far from stable. He was married six times, and his jealousy and infidelity led to the breakdown of many of his relationships. LaMotta’s relationship with his brother Joey was also fraught, with the two often at odds both personally and professionally. He had a series of run-ins with the law, including a stint in prison for pimping. However, he later turned his life around and became a stand-up comedian, actor, and author publishing his autobiography, Raging Bull: My Story, in 1970, which was later adapted into the film. He also performed regularly at clubs and theatres throughout the United States and appeared in a number of films and television shows, including “The Hustler”, “The Bronx Bull”, and “Miami Vice”. LaMotta died on September 19, 2017, at the age of 95.

The Raging Bull Movie

Raging Bull is a deeply complex and emotional film, exploring themes of masculinity, violence, and self-destruction. THE ARMY CHOOSE RAGING BULL SNACKS

In 2021 Raging Bull Snacks was contacted by Scott Pollock, a Captain in The Royal Army Physical Training Corps (RAPTC) and team leader for Army Force Atlantic 21, the official British Army Mixed team entry into the Talisker Whisky Atlantic Challenge. Scott wanted to know if Raging Bull Snacks would be able to supply Raging Bull biltong and Raging Bull jerky to help fuel his crew as they attempted what is acknowledged, for very good reasons, as the world’s toughest row.

THE TALISKER WHISKY ATLANTIC CHALLENGE

The Talisker Whisky Atlantic Challenge starts in La Gomera in the Canary Islands and the crews have to row unsupported 3000 miles to Nelson’s Dockyard in Antigua & Barbuda. Teams race not only against each other, but against the deterioration of their bodies and minds. Each crew member has to row for 2 hours and then rest for 2 hours constantly for between forty and fifty days! They will notch up in excess of one and a half million oar strokes hauling an 8.5m boat through waves up to 20 feet high. Along the way they have to deal with extreme fatigue (no surprise there!), salt sores, muscle wastage, sea sickness, blisters and many other medical issues caused by extreme ocean rowing. When you put all that together it comes as little surprise that more people have climbed Everest than have rowed the Atlantic Ocean.

THE ARMY FORCE ATLANTIC TEAM

What was unique about Army Force Atlantic was that it was the first mixed boat to be entered into the race by the army. Captain Scott’s fellow rowers included Warrant Officer Class 1 Victoria Blackburn, Staff Sergeant Phillip Welch and Sergeant Laura Barrigan. Like Scott all were from the Royal Army Physical Training Corp and were Army Physical Performance Specialists. Which basically means they are responsible for developing and maintaining physical fitness across the army. You can learn more about RAPTC at the end of this blog and why these four individuals were so well prepared for taking on this gruelling challenge.

WHY ROW THE ATLANTIC OCEAN?

There were two primary aims.

Firstly, they wanted to highlight the opportunities that exist to everyone in the Army regardless of their gender, social class or their level of sporting ability.

Secondly, they wanted to raise as much money as they could for The Royal British Legion who have helped members of the Royal Navy, British Army, Royal Air Force, veterans and their families. We all know this incredible charity through their annual poppy appeal.

There was also one more goal the team had their eyes on – beating the world record for the fastest mixed crew to row the Atlantic.

PREPARING TO ROW THE ATLANTIC OCEAN

It will come as no surprise that extreme levels of preparation go into attempting a challenge of this nature. The team spent hours and hours deliberating as to what could go wrong and formulating action plans and then action plans on action plans (in case the first fails). If anything goes wrong mid-Atlantic, you could be days from rescue. Previous teams that have attempted the crossing have spoken of encounters with whales, being tossed about in gale force winds, individuals experiencing hallucinations and in one case a team arriving at the finish line with a marlin’s beak pierced through the hull of the boat!

THE ARMY’S BOAT FOR ROWING THE ATLANTIC

All boats in the challenge are required to carry 220 days of food (remember they are unsupported) and each rower is likely to burn over 5000 calories per day. When your boat is only 8.5m long and there are four of you on it, every item on the boat has to add maximum benefit. Nutritional planning is therefore a critical part of the whole challenge and getting enough protein into the team was a major consideration. This is one of the reasons why Captain Scott contacted the team at Raging Bull Snacks because our biltong and jerky is very high in protein. The other consideration for the team was taste and enjoyment. He wanted a delicious snack the team could look forward to that wasn’t going to be repetitive. That’s why they wanted to take three different biltong flavours – Raging Bull Original Beef Biltong, Raging Bull Chilli Beef Biltong and Raging Bull Teriyaki Beef Biltong.

SO WHAT IS BILTONG?

Biltong is typically made from meat of a high quality. For instance, at Raging Bull Snacks, we use prime cuts of grass-fed silverside beef. The meat is cut into strips and marinated in vinegar, salt, sugar, and spices. Recipes and combinations can vary greatly and it’s not unusual in South Africa for family recipes to be passed down through the generations. Once marinated the meat is hung to dry for several days, preferably in a dry humid environment. This will be naturally achieved in some countries (think Southern Africa for example) otherwise fans and heating can replicate the drying process. It is a versatile snack that allows for many different flavours depending on taste. BILTONG CONTAIN LOTS OF PROTEIN

Raging Bull snacks are packed full of natural protein. Crafted in the UK from ethically sourced silverside beef 100g of Raging Bull Biltong contains nearly 60g of protein. WHY IS BILTONG USED BY ATHLETES

Protein is made up of amino acids, which act like building blocks for the body. When you eat protein after exercise, it gives your muscles the amino acids necessary to repair and rebuild. Repetitive muscle contractions from physical exercise whether it be rowing, jumping, running, body building, gym workouts etc can break down muscle cells and cause damage. As the body does not store protein, consuming high quality protein around exercise is central to providing the muscle with the key elements it needs to optimise recovery. And that recovery becomes pretty important when you are rowing over a million strokes two hours on and two hours off for over 40 days. Iron

Zinc

Is a mineral that is essential for many important functions in the body. It too is a trace mineral. Zinc is found naturally in many foods, including meat, seafood, beans, nuts, and whole grains. Zinc plays a role in various physiological processes in the body, including immune system function, protein synthesis, wound healing, growth and development, reproductive health, skin health, hormone regulation, and antioxidant defence. It is required for the synthesis of enzymes, hormones, and other proteins, and is involved in the regulation of cell growth and division.

THE ARMY FORCE ATLANTIC RECORD

So after months of meticulous preparation and a years’ worth of training how did the “Oarsome Foursome” do? Well, they crossed the finishing line in an official time of 40 days 23 hours and 57 minutes beating the world record that had stood at 42 days and 10 hours! Even more remarkable they weren’t helped by the weather. If the conditions are right, then wind and currents can help the boats along. As Captain Scott explained;

“We had to row the whole way – no surfing off the waves, no ‘free’ mileage.”

Summing up the whole experience Scott speaks of his abiding memory of taking on the Atlantic Ocean;

“It’s always going to be the team; the unity and the way we have engaged with each other has been second to none. For the last two years we’ve done lots of research. We’ve looked at how to tackle it and when we’ve come to do it, we’ve done exactly what we said we were going to do. We have done it in the manner which we said we wanted to do it in.”

And the greatest challenge they faced? Not surprisingly, the lack of sleep with the 2 hour on 2 hour off rotation.

“The sleep deprivation is probably the biggest challenge. We got about three hours sleep every night for the last 40 nights and that is hard to get over. You go through all sorts of mood issues, hydration issues, feeding issues because you’re so tired”.

A truly remarkable challenge and one Raging Bull Snacks was very proud to support. It is of course a great endorsement for the nutritional value of our biltong and is why so many of our customers already eat Raging Bull Biltong before and after their workouts.

BILTONG AND HIGH PROTEIN DIETS

Some people consume biltong as part of a high protein diet. We would would always advise our customers to seek professional nutritional advice before eating biltong as part of a high protein diet. Some popular examples of high-protein diets include the Atkins diet, the Paleo diet, and the South Beach diet.

High protein diets work by increasing the intake of protein while reducing the intake of carbohydrates and/or fats. When the body consumes more protein than it needs, the excess protein is broken down into amino acids, which can then be used for a variety of functions, including building and repairing tissues, producing enzymes and hormones, and supporting immune function.

Biltong is high in protein. What is protein?

Protein is a nutrient your body needs to grow and repair cells, and to work properly. They are the building blocks of life. Every cell in the human body contains protein. Protein foods are broken down into parts called amino acids during digestion. Some of these amino acids can be made by your body – there are 11 of these known as non-essential amino acids. There are then 9 amino acids that your body can’t make. These are known as essential amino acids. As your body cannot make them they have to be consumed in your diet. Foods that contain these proteins include meat, fish, eggs, dairy products, seeds and nuts and legumes.

As Raging Bull biltong is cured and air-dried rather than cooked it retains these nutrients and vitamins. For example, the biltong we craft at Raging Bull Snacks contains nearly 60g of protein per100g of meat.

So what do proteins do for your body’s health?

    1. They help to build blocks of bones, muscles, cartilage and skin. Hair and nails are also comprised mostly of protein.
    2. They help to repair tissue.
    3. They transport oxygen from the lungs to the tissues that need it. This is done through the protein Hemoglobin which is found in red blood cells. It contains iron, which allows it to transport the oxygen.
    4. They help you to digest as about half the dietary protein that you consume makes enzymes. There are two enzymes in your saliva called amylase and lipase. They mostly break down carbohydrates and fats. Once a protein source reaches your stomach, hydrochloric acid and enzymes called proteases break it down into smaller chains of amino acids.
    5. They help to build hormones in the pituitary gland. These hormones then go on to trigger the release of sex hormones, estrogen, testosterone, and progesterone.

Biltong is low in carbohydrates. What are carbohydrates?

Carbohydrates, also known as saccharides or carbs, provide energy for the body. There are three types of carbohydrates – sugar, starch and fibre.

Sugar

Sugar is a simple carbohydrate that is digested and absorbed into your blood easily. It occurs naturally in some foods, including fruits, vegetables, milk and milk products. Types of sugar include fruit sugar (fructose), table sugar (sucrose) and milk sugar (lactose). Added sugars, added in the manufacturing process, can be found in foods like chocolate and biscuits. Excessive consumption of added sugars can contribute to a range of health problems.

Starch

Starch is a complex carbohydrate made of many sugar units bonded together. Our bodies can quickly break down this starch into sugar again. It occurs naturally in vegetables, grains, and cooked dry beans and peas.

Fiber

Fiber also is a complex carbohydrate. Its not strictly a nutrient because we can’t digest it in our stomachs and absorb it into the blood. Fibre is found naturally in wholegrain foods such as oats, wholemeal bread and brown rice.

So what do carbohydrates do for your body’s health?

Consuming enough carbohydrates can enhance physical performance, keep blood sugar levels in check, and provide you the energy you need for everyday tasks. Additionally, some kinds of carbs, including fibre, can facilitate better digestion, lower the risk of certain diseases, and increase feelings of fullness.  However, your choice of carbohydrates is important. Whole food sources such as fruit, and vegetables are likely to be better for you than processed carbs like added sugar.

So what does Vitamin B12 do for your body’s health?

Dried meat snacks have been enjoyed for centuries. Not only can they be stored for long periods of time (very important in the days before refrigeration) but they can also provide an important source of nutrition. Two of the most popular dried meat snacks are biltong and jerky. While both are delicious and enjoyed in many parts of the world there are some very important differences between the two snacks. We are going to explore those differences from their origins and history to their preparation, taste and texture.

 

A brief history of biltong

Biltong has a very long history in South Africa where it was first used as a way to preserve meat during long hunting expeditions. The first recorded use of biltong as a snack can be traced back to the 17th century, when Dutch settlers in South Africa began using the technique to preserve meat during voyages to the East Indies. Indeed the word “biltong” is derived from the Dutch words “bil,” meaning rump, and “tong,” meaning strip or tongue.

 

The traditional method of making biltong involved hanging cuts of meat in the sun to dry but over time the process was refined. Preparation evolved to include marinades of spices and vinegar which not only added flavour but also helped to preserve or “cure” the meat, vital in the days before refrigeration. Biltong techniques and recipes were passed down from generation to generation and it became a staple snack in South Africa. In recent years there has seen a huge surge in popularity in many other countries particularly in Europe and more recently in America. It is now possible to buy biltong in the UK in most supermarkets and buy biltong on line.

A brief history of jerky

There is evidence to suggest the ancient civilisations of the Inca and Aztec Empires dried meat to preserve it for later use. The word jerky is derived from the Quechua word ch’arki which means “dry salted meat”. The Quechuan peoples lived primarily in the Peruvian Andes.

 

The practice of drying meat was later adopted by Native Americans tribes and early settlers in North America who needed a portable food source that would last for long periods of time without refrigeration. The early explorers and settlers in North America used it as an important source of protein during long journeys and in the 19th century jerky became a staple food for cowboys and pioneers. Over the years jerky gradually became a staple snack throughout the Americas. The rise of healthy snacking and a desire for high protein snacks has seen Jerky and indeed biltong’s popularity grow rapidly in many countries in recent years. While previously only available in specialist shops it is now possible to buy jerky in the UK in most major supermarkets as well as buy jerky on line.

How is biltong made?

Biltong is typically made from meat of a high quality. For instance, at Raging Bull Snacks, we use prime cuts of grass fed silverside beef. The meat is cut into strips and marinated in vinegar, salt, sugar, and spices. Recipes and combinations can vary greatly and it’s not unusual in South Africa for family recipes to be passed down through the generations. Once marinated the meat is hung to dry for several days, preferably in a dry humid environment. This will be naturally achieved in some countries (think Southern Africa for example) otherwise fans and heating can replicate the drying process. It is a versatile snack that allows for many different flavours depending on taste. How is Jerky made?

Jerky can be made from a variety of different meats, including beef, turkey and pork but more exotic types can also be used. In recent years plant-based Jerky has been developed for those seeking a vegetarian option. When it comes to meat jerky then the better the quality of meat, the better the jerky. At Raging Bull Snacks for instance, we again only use prime cuts of grass feed silverside beef.

 

Once the meat is selected it is sliced into thin strips and marinated. The marinade really depends on personal tastes and could, for example, include combinations of soy sauce, brown sugar, black pepper, garlick powder, honey, lemon juice, balsamic vinegar and cayenne pepper. There are many different flavours of jerky available on the market. For instance, a search of the internet displays flavours such as coconut jerky, bacon jerky, soy jerky, whiskey jerky, clam jerky and even cactus jerky. A summary of the differences between biltong and jerky

As discussed above, although jerky and biltong share some similarities, they differ in origin, preparation and taste. We know because at Raging Bull Snacks we make both biltong and Jerky!

 

Origin:

Biltong originated in South Africa. Jerky has its roots in North America.

 

Meat:

Biltong has traditionally been made from beef and game meat. Jerky on the other hand can be made from a variety of different meats including beef, pork, turkey etc.

 

Preparation:

Biltong is made by first marinating the meat in a mixture of vinegar and spices to cure it. It is then hung whole, air-dryed for several days to de-hydrate and then sliced. Jerky is sliced, marinated with spices and flavourings and then cooked at low temperatures to dehydrate and cook the meat. The absence of heat in the preparation of biltong is one of the key distinguishing features between the two snacks.

 

Texture and taste:

Biltong tends to have a softer and saltier taste due to the way it is marinated while jerky can be drier, smokier and more chewy. Jerky’s preparation also allows for much more varied flavours to be created.

How to make Biltong at home

If you don’t want to buy biltong on line, below is just one recipe for making your own. There are many different recipes on the web and through a bit of trial and error you will soon discover a favourite taste.

Ingredients:

  • 2 pounds of beef (sirloin or flank steak)
  • 1/2 cup of red wine vinegar
  • 1/2 cup of Worcestershire sauce
  • 1 tablespoon of coarse sea salt
  • 1 tablespoon of coriander seeds
  • 1 tablespoon of black pepper
  • 1 tablespoon of brown sugar
  • 1 teaspoon of bicarbonate of soda

Instructions:

Cut the beef into thin strips, about 1/4 inch thick.

Mix together the red wine vinegar and Worcestershire sauce in a bowl.

In a separate bowl, mix together the salt, coriander seeds, black pepper, brown sugar, and bicarbonate of soda.

Dip each strip of beef into the vinegar and Worcestershire mixture, then coat it in the spice mixture.

Hang the strips in a biltong box or equivalent. Make sure there is enough space between each strip so that they do not touch. Dry the biltong, for 3-5 days. The biltong is ready when it is completely dry but still slightly soft to the touch.

How to make Jerky at home

If you don’t’ want to buy jerky on line there are many recipes for making it at home. Here is a one simple one to try;

 

Ingredients:

1 pound of lean meat (beef, turkey, or deer)

1/4 cup of soy sauce

1/4 cup of Worcestershire sauce

2 tablespoons of brown sugar

1 teaspoon of black pepper

1 teaspoon of onion powder

1 teaspoon of garlic powder

 

Instructions:

Trim the meat of any fat and cut it into thin strips, about 1/8 inch thick.

Mix together the soy sauce, Worcestershire sauce, brown sugar, black pepper, onion powder, and garlic powder in a large bowl.

Add the meat strips to the bowl and toss them in the marinade until they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Preheat your oven to 175°F (80°C) or the lowest temperature possible.

Line a baking sheet with aluminium foil and place a wire rack on top.

Remove the meat from the marinade and pat it dry with paper towels.

Place the meat strips on the wire rack, making sure they do not overlap.

Bake the meat in the oven for 4-6 hours, or until it is fully dried and slightly chewy. Check the meat periodically and rotate the baking sheet if necessary to ensure even drying.

Once the jerky is done, remove it from the oven and allow it to cool completely before storing it in an airtight container.

WHAT IS JERKY?

Jerky is a meat snack that has been marinated in spices, sliced into thin strips and dried or smoked. It has its origins in South America where indigenous people dried meat as a way to preserve it. In this blog we are going to explore the history of jerky and how it’s made before going on to discuss its health benefits and why jerky is different to biltong.

What is Jerky?

Jerky originated in South America and is a dried meat snack. It can be prepared using different types of meat that are first sliced into thin strips and then marinated in a mixture of seasonings. The meat is then dried in either an oven, a smoker or dehydrator. The taste will depend on the seasonings used but the result is a deliciously chewy high protein snack.

Where does Jerky come from?

There is evidence to suggest the ancient civilisations of the Inca and Aztec Empires dried meat to preserve it for later use. The word jerky is derived from the Quechua word ch’arki which means “dry salted meat”. The Quechuan peoples lived primarily in the Peruvian Andes.

The practice of drying meat was later adopted by Native Americans tribes and early settlers in North America who needed a portable food source that would last for long periods of time without refrigeration. The early explorers and settlers in North America used it as an important source of protein during long journeys and in the 19th century jerky became a staple food for cowboys and pioneers. Over the years jerky gradually became a staple snack throughout the Americas. The rise of healthy snacking and a desire for high protein snacks has seen Jerky and indeed biltong’s popularity grow rapidly in many countries in recent years.

How is Jerky made?

Jerky can be made from a variety of different meats, including beef, turkey and pork but more exotic types can also be used. In recent years plant-based Jerky has been developed for those seeking a vegetarian option. When it comes to meat jerky then the better the quality of meat, the better the jerky. At Raging Bull Snacks for instance, we only use prime cuts of grass feed silverside beef.

Once the meat is selected it is sliced into thin strips and marinated. The marinade really depends on personal tastes and could, for example, include combinations of soy sauce, brown sugar, black pepper, garlick powder, honey, lemon juice, balsamic vinegar and cayenne pepper. There are many different flavours of jerky available on the market. For instance, a search of the internet displays flavours such as coconut jerky, bacon jerky, soy jerky, whiskey jerky, clam jerky and even cactus jerky. At Raging Bull Snacks we keep it a bit more traditional by selling Peppered Beef Jerky, Sweet Hot Beef Jerky and Original Beef Jerky.

Once marinated, the meat needs to be dried. This can be done in an oven, dehydrator or smoker. It is important to dry the meat at a low temperature until its firm and chewy.

What are the health benefits of Jerky?

Jerky, as well as being absolutely delicious, is high in protein. Raging Bull Snacks Jerky for instance contains 39g of protein per 100g of meat. Jerky is high in protein. What is protein?

Protein is a nutrient your body needs to grow and repair cells, and to work properly. They are the building blocks of life. Every cell in the human body contains protein. Protein foods are broken down into parts called amino acids during digestion. Some of these amino acids can be made by your body – there are 11 of these known as non-essential amino acids. There are then 9 amino acids that your body can’t make. These are known as essential amino acids. As your body cannot make them they have to be consumed in your diet. Foods that contain these proteins include meat, fish, eggs, dairy products, seeds and nuts and legumes.

So what do proteins do?

  1. They help to build blocks of bones, muscles, cartilage and skin. Hair and nails are also comprised mostly of protein.
  2. They help to repair tissue.
  3. They transport oxygen from the lungs to the tissues that need it. This is done through the protein Hemoglobin which is found in red blood cells. It contains iron, which allows it to transport the oxygen.
  4. They help you to digest as about half the dietary protein that you consume makes enzymes. There are two enzymes in your saliva called amylase and lipase. They mostly break down carbohydrates and fats. Once a protein source reaches your stomach, hydrochloric acid and enzymes called proteases break it down into smaller chains of amino acids.
  5. They help to build hormones in the pituitary gland. These hormones then go on to trigger the release of sex hormones, estrogen, testosterone, and progesterone.

Jerky’s popularity has been sparked by people discovering not only its great taste but also the fact that it can be a healthy snack alternative. It’s high protein content is particularly appealing to people who lead busy and active lifestyles and want to snack healthy or even follow particular diets. There are those too of course who just love its taste with a cold beer or glass of red wine! Jerky is a very convenient and portable snack and with a large range of flavours and vegan jerky options, there is a flavour or version to suit most tastes. What are the differences between Biltong and Jerky?

Although jerky and biltong share some similarities, they differ in origin, preparation and taste. We know because at Raging Bull Snacks we make both biltong and jerky! So what is biltong?

 

What is Biltong?

Biltong originated in South Africa and is a type of dried meat snack. It is prepared using premium cuts of meat that have been marinated, seasoned, and then air-dried. Where does biltong come from?

Biltong has a very long history in South Africa where it was first used as a way to preserve meat during long hunting expeditions. The first recorded use of biltong as a snack can be traced back to the 17th century, when Dutch settlers in South Africa began using the technique to preserve meat during voyages to the East Indies. Indeed the word “biltong” is derived from the Dutch words “bil,” meaning rump, and “tong,” meaning strip or tongue.

The traditional method of making biltong involved hanging cuts of meat in the sun to dry but over time the process was refined. Preparation evolved to include marinades of spices and vinegar which not only added flavour but also helped to preserve or “cure” the meat, vital in the days before refrigeration. Biltong techniques and recipes were passed down from generation to generation and it became a staple snack in South Africa. In recent years there has seen a huge surge in popularity in many other countries particularly in Europe and more recently in America.

 

How is biltong made?

Biltong is typically made from meat of a high quality. For instance, at Raging Bull Snacks, we use prime cuts of grass fed silverside beef. The meat is cut into strips and marinated in vinegar, salt, sugar, and spices. Recipes and combinations can vary greatly and it’s not unusual in South Africa for family recipes to be passed down through the generations. Once marinated the meat is hung to dry for several days, preferably in a dry humid environment. This will be naturally achieved in some countries (think Southern Africa for example) otherwise fans and heating can replicate the drying process. It is a versatile snack that allows for many different flavours depending on taste. A summary of the differences between biltong and jerky

As discussed above, although jerky and biltong share some similarities, they differ in origin, preparation and taste.

Origin:

Biltong originated in South Africa. Jerky has its roots in North America.

Meat:

Biltong has traditionally been made from beef and game meat. Jerky on the other hand can be made from a variety of different meats including beef, pork, turkey etc.

Preparation:

Biltong is made by first marinating the meat in a mixture of vinegar and spices to cure it. It is then hung whole, air-dryed for several days to de-hydrate and then sliced. Jerky is sliced, marinated with spices and flavourings and then cooked at low temperatures to dehydrate and cook the meat. The absence of heat in the preparation of biltong is one of the key distinguishing features between the two snacks.

Texture and taste:

Biltong tends to have a softer and saltier taste due to the way it is marinated while jerky can be drier, smokier and more chewy. Jerky’s preparation also allows for much more varied flavours to be created.

How to enjoy Jerky

While jerky can obviously be enjoyed on its own (and it mostly is) it is a great addition to charcuterie and cheese boards and pairs very nicely with red wine and beer. Many people also use it as an ingredient in other dishes such as stews or on salads or even in sandwiches. It adds flavour and protein. We will be releasing regular recipes for you to enjoy but here are a couple to get you going.

 

Jerky Pasta Salad

Ingredients:

1 pound of cooked pasta (such as fusilli or penne)

1/2 cup of jerky (flavour of your choosing), chopped into small pieces

1/2 cup of cherry tomatoes, halved

1/2 cup of chopped cucumbers

1/4 cup of chopped red onions

1/4 cup of chopped fresh parsley

1/4 cup of olive oil

2 tablespoons of red wine vinegar

Salt and pepper, to taste

Instructions:

In a large bowl, combine the cooked pasta, jerky, cherry tomatoes, cucumbers, red onions, and parsley. In a separate bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.

 

Jerky Chili

Ingredients:

1 pound of ground beef

1/2 cup of original jerky, chopped into small pieces

1 can of kidney beans, drained and rinsed

1 can of diced tomatoes

1 cup of beef broth

1 tablespoon of chili powder

Salt and pepper, to taste

Instructions:

In a large pot or Dutch oven, brown the ground beef over medium-high heat. Add the chopped jerky, kidney beans, diced tomatoes, beef broth, chili powder, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.

How to make Jerky at home

If you don’t’ want to buy our amazing jerky there are many recipes on line for making it at home. Here’s one simple recipe;

 

Ingredients:

1 pound of lean meat (beef, turkey, or deer)

1/4 cup of soy sauce

1/4 cup of Worcestershire sauce

2 tablespoons of brown sugar

1 teaspoon of black pepper

1 teaspoon of onion powder

1 teaspoon of garlic powder

 

Instructions:

Trim the meat of any fat and cut it into thin strips, about 1/8 inch thick.

Mix together the soy sauce, Worcestershire sauce, brown sugar, black pepper, onion powder, and garlic powder in a large bowl.

Add the meat strips to the bowl and toss them in the marinade until they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Preheat your oven to 175°F (80°C) or the lowest temperature possible.

Line a baking sheet with aluminium foil and place a wire rack on top.

Remove the meat from the marinade and pat it dry with paper towels.

Place the meat strips on the wire rack, making sure they do not overlap.

Bake the meat in the oven for 4-6 hours, or until it is fully dried and slightly chewy. Check the meat periodically and rotate the baking sheet if necessary to ensure even drying.

Once the jerky is done, remove it from the oven and allow it to cool completely before storing it in an airtight container.
