From the judges at The Guild of Fine Food – “Neat slices which display the bright colour of the meat in the centre. The level of chilli is well placed and never becomes too much. It works well with the characteristic coriander and spices of biltong but remains the most pronounced taste. It has a good chew with the requisite level of moistness. Underlying umami notes. The chilli is fruity and brings flavour rather than just heat. The salting is careful and it has a lingering spicy finish. This biltong has a deep red glow to it. The grain of the meat is nice to look at too. There is a tang to the meat and it feels juicy in the mouth even though it’s a dried meat. The experience of chewing this product is pleasant. The spices and crushed chilli flavour develops into a peppery heat which warms the mouth nicely. The level of spicing has clearly been thought about. Good work!”
